Obesity Facts - Food I Can’t Eat

Let me start with the foods that I have to avoid, and in general these are any which have white flour or are cereal based. If we go back to the insulin index, and look at carbohydrate rich foods, then I avoid any food with an insulin score over 40, so I no longer eat pasta, rice, or potatoes, but I am allowed one slice of bread per day. It is the refined carbohydrates such as white flour and white rice and sugar that cause most of the problems, as they are converted to glucose in the body which is then stored in the fat cells. As an Italian, giving up pasta has been hard, but even this I only used to eat occasionally, so it has only been a minor inconvenience.

There are certain fruits that I have to avoid, particularly the exotic fruits such as pineapple, mango and bananas and grapes - you can see from the insulin chart the reasons why with 81 for bananas and 82 for grapes. In short, any fruit that has a high insulin score. Bakery products and most snack foods are off limits. So what can I eat? - the answer is a great deal!! Below is a table of a typical week’s food and remember there are very few restrictions on quantity so if I am hungry I just have something else to eat - the irony is ( as I said earlier) that because I am eating foods which are balanced with my metabolism, I do not feel hungry.
